Three Labor-Less Recipes

This Labor Day Weekend, treat yourself and your guests to these labor-less meals. All of these meals can be prepared within 10 minutes, serve 4 people (so if you have more people, make sure you adjust the quantities), and are very easy! Do all the prep work in your apartment and then take advantage of your on-site grills to grill up these foil-meals. Summer may be winding down, but that doesn’t mean you can’t still enjoy a beautiful late-summer night on your rooftop (Park View), balcony or grill station (Carson Street Commons), or pool and patio (City View).

1. Philly Cheesesteak Foil Packs (Recipe courtesy of Delish)

Ingredients: 1 lb. flank steak, thinly sliced; 2 bell peppers, thinly sliced; 1/2 onion, thinly sliced; 2 cloves garlic, minced; 2 tbsp. Italian seasoning; 2 tbsp. extra-virgin olive oil; kosher salt; Freshly ground black pepper; 4 slices provolone

Directions: Heat grill to medium-high. In a large bowl, toss together steak, peppers, onion, garlic, Italian seasoning, and olive oil and season with salt and pepper; Place steak mixture in foil packs. Fold up packs and grill, 10 minutes; Open packs, top with provolone, and cover grill to melt, 2 minutes; serve with rolls or without.

2. Burgers ‘n Fries Foil Packs (Recipe courtesy of Delish)

Ingredients: Cooking spray, for foil; 1 lb. ground beef; 1 tbsp. Worcestershire sauce; 1 tsp. garlic powder; kosher salt; Freshly ground black pepper; 1 lb. bag frozen fries; 4 slices cheddar; Pickles, for serving; Sliced tomatoes, for serving; Ketchup, for drizzling; Mustard, for drizzling

Directions: Heat grill to medium-high and spray 4 sheets of aluminum foil with cooking spray. In a large bowl, combine ground beef, Worcestershire, and garlic powder and season with salt and pepper; Form into four patties; Place each patty on a sheet of aluminum foil with frozen fries. Fold up foil packs; Grill 10 minutes, then open foil packs and top patties with cheddar. Cover grill to let melt, 2 minutes; Top burgers with pickles and tomatoes and drizzle with ketchup and mustard.

3. Chicken, Tomatoes, and Corn Foil Packs (Recipe courtesy of Delish)

Ingredients: 4 boneless skinless chicken breasts; 2 c. grape tomatoes, halved; 2 ears corn, shucked; 2 cloves garlic, thinly sliced; 1/4 c. extra-virgin olive oil, divided; 2 tbsp. butter; kosher salt; Freshly ground black pepper; Fresh basil, for garnish

Directions: Heat grill to high. Cut 4 sheets of foil about 12″ long.; Top each piece of foil with a chicken breast, tomatoes, corn, and garlic. Drizzle each with 1 tablespoon olive oil and top each with a pat of butter. Season with salt and pepper; Fold foil packets crosswise over chicken and vegetable mixture to completely cover the food. Roll top and bottom edges to seal closed.

Grill until internal temperature of chicken reads 170ºF on an instant-read thermometer and vegetables tender; Garnish with basil and serve.
